Turmeric-Maca Pancakes with Stewed Apple

Looking for a nourishing, flavorful breakfast? These Ayurvedic-inspired pancakes are not only delicious but tailored to your cycle with the right seeds! The combination of warming spices, sweet apples, and creamy almond butter will make this breakfast a true delight.
Ingredients
(Oats or spelt) flour (buckwheat for Kapha)
2 eggs (or 1 ripe banana)
Optional: protein powder
Turmeric, cloves, ginger powder, nutmeg, black pepper, maca, cinnamon
1 apple
Dates
Seeds depending on your cycle (see seed cycling blog)
Honey (never heat it) or maple syrup
Yogurt
Almond butter
Instructions
Prepare the pancake batter – Mix the flour, eggs (or banana), protein powder, and all the spices together.
Cook the pancakes – Heat a pan over medium heat and cook about 8 small pancakes in butter, ghee, or coconut oil (for Pitta & Kapha).
Stew the apple – Chop the apple into small pieces and stew it in a little water with cinnamon. In the last few minutes, add the dates to soften them. Stewing your fruit is key for digestion, as raw fruit can ferment in your stomach when combined with other foods, according to Ayurveda.
Assemble the pancakes – Serve the pancakes with yogurt, stewed apples, dates, honey, and almond butter. Add extra nuts or seeds for crunch (Kapha: use coconut flakes).
Add seeds based on your cycle:
Phase 1 of your cycle: flaxseeds, pumpkin seeds, hemp seeds
Phase 2 of your cycle: black sesame seeds, sunflower seeds, hemp seeds
