Sweet Potato Toast - Halloumi-

Mmm... this recipe is so delicious! You can go in so many different directions with the base of this recipe! Today, I’m sharing a cozy variation that’s perfect for fall time. You could add pumpkin for extra vegetables, but I personally think the sweet potato alone is enough.
Ingredients:
1 sweet potato
2 tbsp cottage cheese
1 tsp harissa
Paprika powder and oregano
2 slices of halloumi
Olive oil (optional)
Sun-dried tomatoes (optional)
Preparation:
Slice the sweet potato into thin rounds and cook for 5 minutes.
Pat them dry and air fry at 200°C for 7 minutes until crispy.
Mix the cottage cheese with harissa and season with paprika powder and oregano.
Air fry or pan-fry the halloumi for 4 minutes until golden.
Top the sweet potato toast with the cottage cheese mixture, halloumi, and optionally drizzle with olive oil or add sun-dried tomatoes.
