Sweet Potato Brownies - Healthy, Fudgy and Without Refined Sugars

Who doesn't love brownies? They’re the ultimate treat! But refined sugars? Not for me. Luckily, you can make these delicious, gooey, and nutritious brownies with sweet potato. They’re super simple to make, full of flavor, and perfect for a guilt-free sweet snack.
What You’ll Need
1 sweet potato
4 tablespoons cocoa powder
1 teaspoon baking powder
3 tablespoons cane sugar/coconut blossom sugar
1 teaspoon vanilla powder
A handful of soaked nuts (Pitta: almonds, Kapha: coconut flakes)
50g dark chocolate
2 eggs
(Optional) 50g spelt or whole wheat flour (Kapha: buckwheat flour)
A pinch of sea salt
Spices to taste: clove (Vata & Pitta), nutmeg (Vata), cinnamon (Vata & Kapha)
How to Make Them
Prepare the sweet potato – Cut into cubes and cook until soft.
Mix the ingredients – Blend the sweet potato with a hand blender until it becomes a puree. Then, add the cocoa powder, spices, cane sugar, baking powder, vanilla, chocolate, and nuts.
Add the eggs – Wait for the mixture to cool slightly and then mix in the eggs.
Make it airy – Add flour or oat flour to make the texture lighter.
Want to keep chocolate chunks? – Chop the chocolate into pieces, toss it in a little flour before adding to the batter, so it stays evenly distributed.
Bake – Pour the batter into a baking pan and bake for 12-15 minutes at 180°C. Check with a toothpick to make sure they’re fully cooked.

Almond butter and raspberries for a fresh bite
In winter: stewed pear
For Kapha: low-fat yogurt as a topping
