Nourishing Sweet Potato Toast with Melted Mozzarella and Avocado

Sweet potato toast is one of my favorite options for making a delicious lunch. In this blog, I'm sharing another super tasty sweet potato toast with melted mozzarella and avocado.

Ingredients for this recipe (2 toasts):

  • 1 large sweet potato

  • 1 tablespoon olive oil

  • ½ teaspoon turmeric

  • ¼ teaspoon cumin

  • ¼ teaspoon cardamom

  • Salt and pepper to taste

  • Fresh coriander

  • A bit of grated ginger

  • Several slices of mozzarella, sliced

  • 1 avocado, sliced

  • Sesame seeds

Preparation:

  1. Preheat the oven to 200°C. Slice the large sweet potato in half and place the halves on a baking tray.

  2. Make the spice mix: Mix 1 tablespoon of olive oil with turmeric, cumin, cardamom, salt, and pepper to taste. Add fresh coriander and a bit of grated ginger for extra flavor.

  3. Coat the sweet potato halves with the spice mix and bake them in the oven for 20-25 minutes, depending on the thickness of the potato.

  4. In the last 10-15 minutes of baking time, add the sliced mozzarella on top of the sweet potato halves so it can melt and become golden brown.

  5. Remove the sweet potato from the oven and add the sliced avocado. Garnish with sesame seeds for an extra crunch.
