Nourishing spiced apple crumble pie -for hormone and gut health-

This is such a fantastic recipe! I had a few apples lying around that weren't getting eaten and had a craving for apple pie, so I knew I had only one option—apple pie! Since it's really important for me that my hormones and gut are happy, I made a version with nourishing ingredients.


Ingredients:

For the Crust:

  • 250 g butter (room temperature)

  • 150 g coconut blossom sugar

  • 200 g spelt flour

  • 100 g rye flour

  • 100 g plantain flour (optional, substitute with spelt or rye flour if needed)

  • 2 medium eggs

  • 1 tbsp cinnamon

  • Pinch of salt

  • 2 tsp baking powder

For the Apple Filling:

  • 5 ripe apples (preferably a bit grainy or mushy)

  • 1 tbsp cinnamon

  • 1 tsp cardamom

  • ½ tsp cloves

  • ½ tsp nutmeg

  • Pinch of black pepper

  • 2-3 tbsp coconut blossom sugar

For the Crumble Topping:

  • 100 g rolled oats

  • 75 g butter (melted)

  • 2-3 tbsp coconut blossom sugar


Instructions:

  1. Make the Dough:

    • Cream the butter and coconut blossom sugar together until smooth.

    • Sift the spelt flour, rye flour, (plantain flour if using), cinnamon, baking powder, and salt, then add to the butter mixture.

    • Beat the eggs and add them to the dough. Knead until smooth. Add a splash of cold water if the dough is too dry, or extra flour if it’s too sticky.

    • Wrap the dough in plastic wrap and let it rest in the fridge for at least 30 minutes (I often do just 10 minutes, honestly!).

  2. Prepare the Apple Filling:

    • Peel the apples, remove the core, and slice them into cubes or wedges.

    • Mix the apples with cinnamon, cardamom, cloves, nutmeg, black pepper, and coconut blossom sugar. Let the flavors combine for a few minutes.

  3. Line the Cake Tin:

    • Preheat the oven to 180°C (356°F) (convection).

    • Grease a springform pan.

    • Roll out the dough on a floured surface into a round sheet about 5 mm thick and line the cake tin with it. Trim the edges neatly and prick holes in the base.

  4. Make the Crumble:

    • Combine the oats with melted butter and coconut blossom sugar until you have a crumbly texture.

  5. Assemble & Bake the Pie:

    • Spread the apple filling over the crust.

    • Sprinkle the crumble topping evenly over the apples.

    • Bake the pie for 45-50 minutes until the top is golden brown and the apples are soft. Keep an eye on it to prevent overcooking.
