Nourishing Poke Bowl with Salmon, Avocado & Tahini

This healthy poke bowl with wild salmon, avocado, and a creamy tahini sauce is packed with healthy fats, proteins, and fiber. It's perfect as a light lunch or dinner, and you can easily customize it to fit your dosha (Vata, Pitta, Kapha)! I’m a big fan of rice, and to stabilize my blood sugar, I cook the rice and then refrigerate it, which turns it into resistant starch (good for digestion).
Ingredients
Base:
1 cup basmati rice (Kapha? Choose brown rice for extra fiber!)
Toppings:
1 avocado, sliced (Kapha: use carrot instead)
1 cucumber, diced (Vata & Kapha: swap with roasted zucchini)
Fresh wild salmon (or choose air fryer tofu or halloumi for a vegetarian option)
Seasonal Options:
Summer: ½ mango, diced
Winter: Cooked pumpkin, diced
Toppings:
Sesame seeds or seeds according to your seed cycling plan
Tahini Sauce:
2 tablespoons tahini
1 tablespoon lemon juice (Vata & Pitta: choose lime instead)
1 teaspoon soy sauce
A splash of water to thin
Raw honey
Instructions
Cook the rice – Cook the rice according to the package instructions and let it cool.
Prepare the toppings – Dice the avocado, cucumber (or roasted zucchini), mango or pumpkin.
Prepare the protein – Slice the wild salmon thinly or air fry the tofu with some oil and spices.
Make the tahini sauce – Mix all the ingredients for the sauce and thin it with water until it forms a creamy dressing.
Assemble the bowl – Start with a base of rice, then add avocado, cucumber, mango/pumpkin, and salmon or tofu.
Finish with the tahini sauce – Drizzle the creamy tahini sauce over the bowl and garnish with sesame seeds or seeds according to your cycle.
