You might be surprised... chickpeas as a sweet topping for your yogurt, pancakes, or as a crunchy snack? Yes, and not only is it super delicious, but it's also nutritious and packed with protein. The best part? This recipe is simple, and you can even snack on them like a sweet bar snack. A healthy, protein-rich treat that you'll keep coming back to.
What You'll Need
1 can of chickpeas (no additives)
1 teaspoon cinnamon
1 tablespoon coconut sugar (or a sugar substitute)
1 tablespoon coconut oil (melted)
1 teaspoon cocoa powder (optional)
Air fryer or oven
How to Make Them
Rinse and Dry
Drain the chickpeas, rinse them well, and pat them dry with a tea towel or paper towels. You can remove the skins, but this step is optional.
Pre-Bake
Briefly dry the chickpeas in the oven. This step helps make them extra crispy.
Make the Mixture
Melt the coconut oil and mix it with the cinnamon, coconut sugar, and optional cocoa powder or other spices like nutmeg or gingerbread spice.
Mix the Chickpeas
Take the chickpeas out of the oven and toss them in a bowl with the melted oil. Then add the spice mixture, ensuring everything is well coated.
Bake
Spread the chickpeas on a baking sheet lined with parchment paper. Bake in the oven or air fryer at 175°C (350°F) for 20 minutes. Keep a close eye on them, as they can burn quickly.
Cool and Store
Let the chickpeas cool (they'll get extra crispy), and store them in an airtight container for up to a week.
Tips
Sprinkle these chickpeas over your breakfast, add them to your yogurt, or simply enjoy them as a snack. A delicious, healthy treat that satisfies your cravings without the guilt.
Enjoy! Perfect with yogurt or as a tasty snack!
X's,
Aimée
