Ayurvedic Spiced Chicken Salad – Good for Blood Sugar & Digestion!-

The magic of this dish lies in the spices. Ayurvedic spices support digestion while adding a deep, warming flavor to the meal. This dish can be very low in carbs if you’re following a keto diet. Personally, I love adding a little extra carbs, so I make some modifications to suit my taste! Either way, this is a deliciously filling lunch with a range of flavors!
Ingredients for the Chicken:
200g ground chicken
½ tsp turmeric
½ tsp black pepper
1 tsp paprika powder
½ tsp garam masala
½ tsp ginger powder
½ tsp cumin seeds (a great addition for Ayurvedic balance)
½ tsp coriander powder (supports digestion)
Pinch of cinnamon (warming and good for blood sugar levels)
1 tbsp olive oil or ghee for cooking
Cooking Instructions:
Heat the olive oil or ghee in a pan.
Add the ground chicken and cook, breaking it up as it browns.
Sprinkle the spices over the meat and cook until golden brown and fully cooked.
Salad Base with Extra Nutrients
A good salad starts with a flavorful base. By massaging the greens with a dressing of apple cider vinegar and extra virgin olive oil, the flavors deepen and the salad becomes more digestible. Plus, apple cider vinegar helps support stable blood sugar levels, so it's a great addition!
Ingredients for the Salad:
Handful of arugula, mixed greens, or lettuce (or more, as you prefer)
1 tsp apple cider vinegar
1 tsp cold-pressed extra virgin olive oil (or sesame oil for Vata balance)
Pinch of (Celtic) sea salt
1 tsp honey
Crunchy Toppings
Seeds and nuts add a wonderful crunch while providing extra healthy fats. I use seeds based on the seed cycling principle and toss in a handful of nuts to keep my hormones happy!
Toppings:
1 tbsp seeds
Handful of walnuts or almonds (for healthy fats)
¼ cucumber, sliced
½ avocado, chopped
Assembling the Salad:
Add the spiced chicken and toppings to the salad.
Toss everything together and enjoy!

I personally can’t live without carbs, so I pair my salad with:
A slice of sourdough bread
Roasted sweet potatoes
Roasted pumpkin chunks from the oven
